Crafted from 100% hand-picked Fiano grapes, the Don Chisciotte 2022 undergoes spontaneous fermentation using only indigenous yeasts in stainless steel tanks. The defining step is a 10-day skin maceration, which imparts structure, depth, and aromatic complexity to the juice. Aged for a year, it is eventually bottled without any fining or filtration, preserving the full, vibrant essence of this remarkable organic Irpinia wine.
Appearance: Deep golden-yellow hue, warm and luminous, characteristic of a premium unfiltered Fiano.
