We fermented a beer rich in oats with our brewer’s yeast, then added brettanomyces trois in the secondary fermentation together with the passion fruit. Even the beans of paradise were in the mix, giving this beer a tropical, floral but woody character. This beer bridges those who don’t like beer to make beer.
