100% pinot noir from the Ay and Sézanne vineyards which are around 35 years old. Cold maceration of the grapes for 72h before fermentation, vinification in steel with malolactic fermentation and resting on the fine lees for 6 months. Basic Cuvèe with 30% Vin de Reserve, which rested on the lees for no less than 36 months. Final dosage of about 6/ gr./litre.
