Amarone della Valpolicella – Dal Cero After harvesting and a careful selection, the grapes are left rest in a loft for a period ranging from 3 to 4 months, taking care of the spacing between bunches to favour the correct and better drying. The dried grapes are then pressed and macerated on the skins for 15-20 days at a temperature of 23-25 C.
The wine is then aged for about 4 years in tonneaux and 20 hl French oak barrels followed by further aging in the bottle
It is a wine of great intensity and depth, both with the fruit aromas ripe and spices, as for the palate, where the alcohol finds a great balance between the acidity and the refined tannins creating the right travel companions.
