Limbo is the period between summer and autumn when you never know how to dress, too warm too cold, or more importantly what to drink – Red Or white, Beer or Cider, Whisky or Gin. One of the most difficult periods of the year to work on your wine cellar, too hot for red, not hot enough for white. But it’s a great period of the year to try and experiment new and exciting products, new grape varieties or wine regions of the world, which hopefully will set the tone for your winter wine selection.
One little trick to get your palate working in your favor to get through this period, is to stimulate it with simple pleasures and some of the seasons most satisfying dishes are cold cut platters, cheese boards for some casual eating which opens incredible opportunities to experiment with new wine pairings, rendering these long evenings a bit more exciting.
Maybe some Prosciutto Crudo and fresh figs with an incredible red Liber by the Tuscan Vineyard Fattoria Cerreto Libri or even an interesting Smoked Salmon platter with wild fennel together and a drizzle of olive oil together with a natural white wine maybe a Malvasia Cernigoi Gabi. Or Just love to sip a glass of bubbles while preparing your meal, it helps to open your experimental mind in your aperitif preparations, you could try an incredible prosecco Perlage Col di Manza.
For those more intimate evenings you could try a great Italian spumante Rosé by Montecchiesi Camely Brut Rosé with your oysters, caviar, scampi, crudo of fish.
